Preheat oven to 350F.
Line trays with parchment.
In a stand mixer, beat butter and sugar until creamy. Scrape sides as needed.
Add vanilla and all lemon ingredients. Mix 30 seconds, and scrape sides.
Add flour and salt. Mix until dough forms, scraping as needed.
Portion out cookies by scooping 1 Tbsp of dough, then flattening into a rough circle. Cut the circle in half and place each semicircle onto parchment-lined trays.
Bake 10 minutes until bottom is slightly browned.
Cool 10 minutes.
Roll cookies in powdered sugar.
