Double Spice Pumpkin Bread

Ingredients
Dry Ingredients
- 1 3/4 cups AP flour
- 1/2 cup Sugar
- 1/2 cup Brown sugar
- 1 tsp Baking soda
- 3/4 tsp Salt
Finely Ground Spices
- 1 Tbsp Cinnamon
- 2 tsp Ginger
- 1 tsp Nutmeg
- 3/4 tsp Cardamom
- 1/4 tsp Cloves
- 1/2 tsp Coffee
Wet Ingredients
- 2 Eggs - large
- 15 oz Pumpkin puree
- 1/2 cup Coconut oil - melted
- 1/3 cup Water
- 1 tsp Vanilla
Optional
- 1 Tbsp Orange zest
- 1/4 cup Cranberries - dried
- 1/4 cup Nuts - chopped
Instructions
- Preheat oven to 325 F.
- Mix all dry ingredients and spices.
- Whisk all wet ingredients.
- Mix all ingredients together well.
- Pour into a greased loaf pan.
- Bake 1 hour, 40-50 minutes.
Notes
Original recipe calls for baking 1:10-1:25 at 350 F. Noted to try lower temp, longer bake.
Can also be made in a breadmaker:
- Put in wet first.
- Add dry second.
- 5 min stir, 2 min rest, 18 min stir, 85 min bake
- Light/medium color
