Copycat Savannah Smiles
Servings: 50 small cookies
Ingredients
- 1/2 cup Unsalted butter
- 1/2 cup Powdered sugar
- 1/2 tsp Vanilla extract
- 1 Tbsp Lemon juice
- 1 Lemon zest
- 1/4 tsp Lemon extract
- 1 1/2 cup AP flour
- 1/2 tsp Salt
- 1/4 cup Powdered sugar - for finishing
Instructions
- Preheat oven to 350F.
- Line trays with parchment.
- In a stand mixer, beat butter and sugar until creamy. Scrape sides as needed.
- Add vanilla and all lemon ingredients. Mix 30 seconds, and scrape sides.
- Add flour and salt. Mix until dough forms, scraping as needed.
- Portion out cookies by scooping 1 Tbsp of dough, then flattening into a rough circle. Cut the circle in half and place each semicircle onto parchment-lined trays.
- Bake 10 minutes until bottom is slightly browned.
- Cool 10 minutes.
- Roll cookies in powdered sugar.
