Copycat Savannah Smiles

Servings: 50 small cookies

Ingredients

  • 1/2 cup Unsalted butter
  • 1/2 cup Powdered sugar
  • 1/2 tsp Vanilla extract
  • 1 Tbsp Lemon juice
  • 1 Lemon zest
  • 1/4 tsp Lemon extract
  • 1 1/2 cup AP flour
  • 1/2 tsp Salt
  • 1/4 cup Powdered sugar - for finishing

Instructions

  • Preheat oven to 350F.
  • Line trays with parchment.
  • In a stand mixer, beat butter and sugar until creamy. Scrape sides as needed.
  • Add vanilla and all lemon ingredients. Mix 30 seconds, and scrape sides.
  • Add flour and salt. Mix until dough forms, scraping as needed.
  • Portion out cookies by scooping 1 Tbsp of dough, then flattening into a rough circle. Cut the circle in half and place each semicircle onto parchment-lined trays.
  • Bake 10 minutes until bottom is slightly browned.
  • Cool 10 minutes.
  • Roll cookies in powdered sugar.
