Honey Wheat Brown Bread

Servings: 12 large rolls

Ingredients

  • 1 1/4 cups Water
  • 2 1/4 tsp Active dry yeast
  • 1 Tbsp Sugar
  • 1 1/2 cups Whole wheat flour
  • 2 Tbsp Unsalted butter - melted
  • 1/4 cup Molasses
  • 1/4 cup Honey
  • 2 cups AP flour
  • 2 tsp Cocoa powder
  • 1 1/2 tsp Salt

Instructions

Make dough

  • Bloom water, yeast, and sugar in a bowl for 10 minutes.
  • Mix in whole wheat, butter, molasses, and honey with a wooden spoon or on low with a dough hook.
  • Add 1 cup of the AP flour, cocoa, and salt. Continue mixing.
  • Gradually mix in remainder of flour until dough pulls away from the sides.
  • Turn onto a floured surface and knead about 10 minutes until dough is soft and elastic.
  • Roll in an oiled bowl. Cover and rise 60-90 minutes.

Bake

  • Shape dough into loaves (~3) or rolls (~12 large, ~20 small) on a parchment-lined sheet.
  • Cover and rise 60 minutes.
  • Preheat oven to 350 F.
  • Bake 20 minutes for rolls, 30 minutes for loaves.
