Honey Wheat Brown Bread
Servings: 12 large rolls
Ingredients
- 1 1/4 cups Water
- 2 1/4 tsp Active dry yeast
- 1 Tbsp Sugar
- 1 1/2 cups Whole wheat flour
- 2 Tbsp Unsalted butter - melted
- 1/4 cup Molasses
- 1/4 cup Honey
- 2 cups AP flour
- 2 tsp Cocoa powder
- 1 1/2 tsp Salt
Instructions
Make dough
- Bloom water, yeast, and sugar in a bowl for 10 minutes.
- Mix in whole wheat, butter, molasses, and honey with a wooden spoon or on low with a dough hook.
- Add 1 cup of the AP flour, cocoa, and salt. Continue mixing.
- Gradually mix in remainder of flour until dough pulls away from the sides.
- Turn onto a floured surface and knead about 10 minutes until dough is soft and elastic.
- Roll in an oiled bowl. Cover and rise 60-90 minutes.
Bake
- Shape dough into loaves (~3) or rolls (~12 large, ~20 small) on a parchment-lined sheet.
- Cover and rise 60 minutes.
- Preheat oven to 350 F.
- Bake 20 minutes for rolls, 30 minutes for loaves.
